RPAH Diet-friendly recipes|RPAH Diet-Friendly Recipes]]** ] --- # Baby potatoes with spring onions - Serves 4. - Adapted from the Reader’s Digest’s ‘New Potatoes with Shallots’ (*Quick, Thrifty Cooking*, 1985, p. 89). --- ## Ingredients - 750g small new potatoes, scrubbed (but not peeled) - 1 teaspoon salt - 30g nuttelex or butter - grated rind of 1 lemon - juice of ½ lemon - ¼ cup thinly sliced shallots (green part only) --- ## Method 1. Place the **potatoes** in a saucepan with water to cover. Add the **salt** and bring to the boil—about 3 minutes. Place the lid askew on the pan and cook the potatoes for about 15 to 20 minutes, depending on their size, until tender. Drain. 2. Add the **butter, lemon rind** and **lemon juice**, and stir well until the potatoes are glazed. Sprinkle with the shallots and serve. --- ## Tips - The cooked potatoes can be refrigerated and reheated two days later with good results.
