RPAH Diet-friendly recipes|RPAH Diet-Friendly Recipes]]** ] --- # Baked sliced potatoes - Serves 4. - Adapted from the Reader’s Digest’s ‘Baked Sliced Potatoes’ (*Quick, Thrifty Cooking*, 1985, p. 89). --- ## Ingredients - 4 medium-sized potatoes (about 500g) - ¼ cup rice bran oil, or melted nuttelex or butter - 1 teaspoon salt - ½ teaspoon black pepper (if you’ve passed your challenges) - ½ teaspoon dried thyme, oregano, sage or basil (optional, and only if salicylates are okay) + extra oil for greasing --- ## Method 1. Preheat the oven to 230.C or about 210.C if fan-forced. 2. Peel the **potatoes** and cut them into thin slices. Place the slices in a bowl with the **oil, salt** and **pepper**, and add the **thyme** or other herbs, if desired. Toss to mix well. 5. Place the slices in a large greased baking tray, spreading out the slices so that they overlap slightly. 6. Bake the potatoes, uncovered, for about 20 minutes—or longer if you prefer them crispier.
