RPAH Diet-friendly recipes|RPAH Diet-Friendly Recipes]]** --- # Green beans with cheese and garlic - Serves 4. - Adapted from the Reader’s Digest’s ‘Green Beans with Garlic and Cheese’ (*Quick, Thrifty Cooking*, 1985, p. 74). --- ## Ingredients - 500g green beans - approx. ¼ teaspoon [[Citric acid|citric acid]] - 4 tablespoons oil - 2 cloves garlic, peeled and finely chopped - ½ teaspoon black pepper - 2 tablespoons grated Parmesan cheese ## Method 1. Wash the **beans** and cut off the ends. Bring about 2cm of lightly salted water to a boil in a medium-sized saucepan. add the beans, cover, and cook for 8 minutes, or until crisp-tender. 2. Meanwhile, remove the peel from the **lemon** in strips with a swivel-bladed vegetable peeler. Cut the peel into very narrow strips about 4cm long. Squeeze the juice from the lemon. Put both aside. 3. When the beans are done, drain them in a colander. Put the **oil** in the same saucepan and sauté the **garlic** for 1 minute. Add the beans and toss to coat them with the oil and garlic. 4. Add the strips of lemon peel, lemon juice and **pepper**, and toss again. Spoon the beans into a heated serving dish and sprinkle with the **cheese**. Serve at once.
