# Pancakes
## Ingredients
- 1 cup self-raising flour
- 2 tablespoons sugar
- 1/2 teaspoon salt
- 1 cup milk (soy, cow’s milk, etc)
- 2 tablespoons melted nuttelex (or butter/margarine)
- 1 large egg
+ extra nuttelex (for the pan)
+ allowed toppings (e.g. maple syrup, golden syrup, more butter and sugar, homemade pear jam, cooked pears, etc etc)

## Method
1. Preheat frying pan (e.g. my cast iron pan benefits from being pre-heated for about 10 minutes before I add the nuttelex and start cooking). Don’t forget to put your overhead fan on!
2. Mix pancake batter in a large mixing bowl—start with dry ingredients, then add the wet ones in a pool at the centre and mix steadily. They don’t need to be perfectly lump-free before cooking; they won’t taste lumpy once they are cooked.
3. Cook in batches, depending on whatever sized pan you’ve got there, and what size pancakes you like.
Serve with maple syrup, golden syrup, sugar and butter, homemade pear jam, sweet pear compote, or whatever other it-works-for-you toppings you like.
